Oven-Baked Fries 4 Ways
Have your fries and eat them too with four healthy snacks made with sweet potato, zucchini, carrot and jicama.
Ingredients
- 2 pounds medium carrots, peeled and cut into fries
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1 tablespoon Italian parsley, chopped, for topping
Steps
- Preheat oven to 425 degrees F and line a rimmed baking sheet with parchment paper.
- Place carrot fries onto the baking sheet and add the olive oil, sea salt, garlic powder, cumin, and ground black pepper. Toss to coat.
- Spread out the carrot fries evenly onto the baking sheet.
- Place in the oven and bake for 20-30 minutes, tossing halfway, until the carrot fries are tender and starting to turn golden brown on the edges.

- 2 large sweet potatoes, unpeeled and sliced into fries
- 1 tablespoon olive oil
- 1 tablespoon raw honey
- 1/4 teaspoon sea salt
- 1/2 teaspoon ground cinnamon

- Preheat oven to 425 degrees F and line a rimmed baking sheet with parchment paper.
- Place the fries on the baking sheet and add the olive oil, raw honey, sea salt, and cinnamon. Toss well to evenly coat.
- Spread the potatoes over the baking sheet.
- Bake 20-30 minutes, or until well-browned, tossing halfway through.

- 1 cup almond meal
- 1 cup grated parmesan cheese, plus more for garnish
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 2 large eggs, beaten
Steps
- Preheat oven to 425 degrees F and line a rimmed baking sheet with parchment paper.
- In a large bowl, combine almond meal, parmesan cheese, sea salt, and ground black pepper. Set aside.
- Dip the zucchini slices into the egg mixture, coating well, and then allow any excess to drip off.
- Coat with the almond meal mixture.
- Place the coated zucchini fries onto prepared baking sheet and then place into the oven and bake for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

- 1 tablespoon water
- 1 tablespoon olive oil
- 1/2 teaspoon sea salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon ground black pepper
Steps
- Preheat oven to 425 degrees F and line a rimmed baking sheet with parchment paper.
- Place the jicama in a microwave-safe bowl with water. Microwave for 6 minutes.
- Place drained, microwaved jicama on baking sheet and add remaining ingredients. Toss to coat well.
- Spread the jicama fries out on the prepared baking sheet and bake for 25-30 minutes, or until they begin to turn golden brown, tossing halfway through.
