Oven-Baked Fries 4 Ways

Have your fries and eat them too with four healthy snacks made with sweet potato, zucchini, carrot and jicama.


  • 2 pounds medium carrots, peeled and cut into fries
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 1 tablespoon Italian parsley, chopped, for topping


  1. Preheat oven to 425 degrees F and line a rimmed baking sheet with parchment paper.
  2. Place carrot fries onto the baking sheet and add the olive oil, sea salt, garlic powder, cumin, and ground black pepper. Toss to coat.
  3. Spread out the carrot fries evenly onto the baking sheet.
  4. Place in the oven and bake for 20-30 minutes, tossing halfway, until the carrot fries are tender and starting to turn golden brown on the edges.
