- Hey guys, Jordan Andino here and today, for the first time ever, I'm going to be the guinea pig for Tastemade's pantry challenge. Now, what does that mean? It means five people from the Tastemade family are gonna come to this kitchen, right here and give me five things from their pantry that maybe I haven't used before or that they think will stump me. Hmm, highly unlikely. And then what's gonna happen? I'm gonna make some dope ass shit from it and they get to taste it. So guess what? Let's do it. - I have for you, potato pancakes. - Ugh, okay, potato pancakes. - Do you know what you're gonna do with them? - No, I've never used them before. - Okay, well you better cook them better than my momma does. - Yeah, okay. Get out of here, I got this. - May I present... - What the hell is this? - Apple plum baby food and in case you're wondering what I'm doing with baby food it's from my bug out bag. - What's a bug out bag? - You know, like if you need to run from a zombie apocalypse or just need to get out fast. Good luck. - Thank you. Apple plum, I don't know how to say this word, kamut? - You know what tupig is? It's like a glutinous rice with coconut-- - Yeah, yeah, yeah and I grew up eating this actually. - Yeah it's delicious. - But I've never made it, so I've got to represent the Filipino culture, sick, I'm Filipino, this works out. Alright, baby food, Filipino food and potato latke powder. Let's see what the fourth person has in store. - Good luck. - Gourmet cheesy parm. A vegan delight for just about anything. - Anything. - Great, I don't even know what to say right now. Alright, cool, thank you, high five. - You're welcome. - Great, vegan, next you're gonna tell me it's gluten free. It is, it literally says gluten free and dairy free on here. Alright, number five. - Alright man, you ready? - Yeah, I think, I don't know. - Are you sure? - Let me see, let me see. - Alright, bam. - What is this? - These are dino nuggets, man. How do you not know what these are? - Let's do it. - Good luck. - Gotta rock and roll now. Dinosaur chicken nuggets. Okay, we gotta add color. That's mush, this is more mush, everything is legitimately the same effing color or some hue of shit brown. Color, you gotta go green and red. Alright, so here's what I think I'm gonna do. I'm gonna take this, put it through the food processor. Assemble this with the latke, so I'm making a chicken latke. Then I'm gonna do an apple plum and coconut risotto and then for my cheese in the risotto, I'm going to use this... This Parmesan. To garnish, I'll have some tomatoes on there, in it, to give it the color, Swiss chard and parsley to give it that green. Alright, I love challenges, let's get started. So now, bacon. This is gonna help give this kind of sweeter Filipino dessert, a savory flavor so that this rice can be a little more savory. While that happens, let's puree. Okay, alright, don't want that to burn. Okay, and I'm also going to saute off these onions. Like I said, everything needs to be uniform, it'll cook evenly and it tastes even. That's, right there, what you call a brunoise. Alright and as that cooks down, get some garlic. This going there, onions, garlic, what I always say, season in layers. Okay, so now what I'm gonna do is, I'm gonna break this up and I'm gonna make like a risotto out of it cos it's coconut and rice, so why not, right? There's a way to make these flavors work so I'm just trying to do my best to like make it happen without utterly failing. So now what we're gonna do is, we're gonna mix this egg with this chicken, we're gonna make our latke patty. This actually might work though. Okay, so I'm gonna add my cheese to this, thicken it up a little bit and then some cream is just gonna help it really mellow out and then give it that more risotto texture, I'm not gonna add a lot though. And there you go, risotto coming together. So now what I'm gonna do is, I'm gonna make this insane patty, chicken latke patty is what we're gonna call it, okay? This is some kale, it's gonna make it nice and healthy but also green, we're gonna accent the herbaceous note with some of this parsley. Perfect, alright. Gonna give that some life right there, accent it with a little more cream, there you go, risotto's cooking now. Get some tomatoes for our garnish. Alright, just get rid of these guts. Alright, so here's the Filipino risotto with kale, bacon lardon, seasoned with an apple and plum kamut with a fried chicken latke. I'm pretty proud of that actually. - Okay. - Alright, dig in. - Okay. Is this a good bite? - That's a perfect bite. - Okay. - Try it. - Can I just dig right in? I thought there was gonna be a presentation. - There is, there is, eat it and I'll explain to you what you're eating, okay? It's a fried chicken latke on top, then that's a Filipino kale risotto with a vegan cheese. - This was vegan cheese that you used? It tastes really nice and creamy. - The cream though is, I did accent with a little cream. - Okay. - But like... - Okay. - But it is vegan cheese in there. Here are the five ingredients that are in it. Okay so I was given, obviously by you the vegan cheese, which I don't understand. Plum apple baby sauce food is in there. - What? - Latke powder, which is what that is on top, it's like a fried chicken latke. Dinosaur chicken nuggets. - Yum I love those. - Okay those are amazing and then what was the fifth? And then tupig which is the , it's a Filipino glutinous coconut rice. - I'm not kidding, it's really good, I'm serious. - Both pieces of this dish are really good. - It's not bad, right? - I can't believe it. - It's really good. - [Jordan] It's pretty good, right? - It's really, really good. - Isn't it pretty good? - That is amazing. - Fried chicken latke on a Filipino kale risotto. - That's perfect. - And you wouldn't, like, you wouldn't-- - Yeah, you wouldn't be like oh, this has a very dino nugget hint to it. Like I don't know how to feel, it's perfect, I love it. - Boom, thank you.
