Peanut Butter and Jelly Breakfast Quinoa

Beat those morning blues with a quinoa bowl packed with peanut butter, homemade jelly and bananas.

Ingredients

  • 1 cup quinoa (or oats)
  • 2 cups water
  • 1 banana
  • 1 tablespoon honey
  • 1 tablespoon peanut butter, plus more for serving
  • Pinch of salt
  • 1/2 cup almond milk
  • 1/2 cup frozen blueberries
  • 1 tablespoon honey

Steps

  1. Add quinoa and 2 cups of water to a saucepan on high heat, cover and bring to a boil. Turn heat to low and cook for 12-15 minutes or until quinoa opens and is light and fluffy.
  2. Mash in half the banana, honey, peanut butter, salt and almond milk. Stir until it reaches desired yummy consistency.
  3. For the jelly, add the blueberries and honey to a small saucepan on low heat, bring to a boil and cook for 5 minutes or until jammy.
  4. Serve in a bowl topped with homemade jelly or chia jam, sliced remaining half of the banana and peanut butter.
