PB&J Potato Chip Bars

Peanut butter & jam-filled shortbread bars topped with potato chips. The perfect balance of salty and sweet!

Ingredients

  • Base and topping:
  • 1 cup unsalted butter, room temperature
  • 1 cup confectioner’s sugar
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 2 cups all-purpose flour
  • cooking spray
  • 1 cup potato chips, crushed
  • ½ cup unsalted butter, room temperature
  • 1 cup peanut butter
  • 1 cup confectioner’s sugar
  • 1 tsp vanilla extract
  • ½ tsp salt

Steps

  1. Make the base:
  2. Beat the butter and sugar with an electric mixer until smooth. Add the vanilla extract and salt and combine. Add the flour gradually, mixing until combined and the mixture is lumpy.
  3. Press half of the mixture into a 9”x9” square baking pan, coated in cooking spray. Bake at 350F for 25 minutes, or until golden brown. Allow to cool completely.
  4. Combine the remaining base mixture with the potato chips and set aside.
  5. Make the filling:
  6. Beat the butter with an electric mixer until smooth. Add the peanut butter and beat until well combined. Add the vanilla extract and salt and beat until combined. Set aside.
  7. Spread the peanut butter filling into the pan with the base and smooth the surface. Add the jam and spread over the entire surface.
  8. Sprinkle the potato chip mixture on top, then bake at 350F for 25-30 minutes, or until the topping is golden brown.
  9. Cool completely in the pan, then slice and enjoy!
