Peach Blossom Cheesecake

This cheesecake has us dreaming of spring. 🌸

Ingredients

Almond Cream

  • 60g butter
  • 50g powdered sugar
  • 1 egg
  • 70g almond meal
  • 15g cake flour
  • Vanilla extract, to taste

Strawberry Jelly

  • 100ml strawberry syrup
  • 50ml water
  • 15ml water for gelatin
  • 5g gelatin
  • Food coloring (pink)

Cheesecake Dough

  • 180g cream cheese
  • 20g sugar
  • 10ml lemon juice
  • 150ml heavy cream
  • 5g gelatin
  • 15ml water for gelatin

Steps

Almond Cream

  1. To make almond cream (crème d'amande), add butter to a bowl and stir until soft. Add powdered sugar in multiple additions and mix well. Add beaten egg and continue to mix. Add in sifted flour and almond meal and mix well. Lastly, add vanilla essence and mix. Pour the mixture into a tart pan and bake at 180°C for 20-25 minutes.

Strawberry Jelly

  1. To make Strawberry Jelly, mix together strawberry syrup and gelatin. For a darker shade of strawberry jelly, mix in a small drop of pink food coloring.
  2. Cut out strawberry jellies with cherry blossom-shaped cutters.

Cheesecake Dough

  1. In a bowl, combine the ingredients for the Cheesecake Dough and mix with a mixer.
  2. Pour the mixture onto the tart mold with the almond cream, and shape it into a dome with a spatula.
  3. Place the cherry blossom-shaped strawberry jellies on top. Enjoy!
