2 mantou steamed buns
1-2 tablespoons vanilla paste
2 tablespoons brown sugar
Pinch cayenne pepper
1 fresh peach, pitted and sliced into 1/2-inch slices
1 tablespoon butter
2 hefty scoops high-quality vanilla ice cream
1/2 box of vanilla wafers, pureed
Heat a steamed bun, then toss it in finely ground sugar and let sit at room temperature.
In a bowl, mix vanilla paste, brown sugar and cayenne pepper. Toss sliced peaches in the glaze.
Butter a grill pan and cook peaches on one side for about 1 minute. Transfer to a plate to cool slightly.
Scoop a nice big scoop of ice cream, pack it tight, then roll it in the vanilla wafer powder.
To assemble, take a bottom bun and add peaches, then the rolled ice cream, followed by the top bun.
