Peanut Butter and Jelly Funnel Cakes

We combined a childhood favorite with a classic fair food to create something amazing.

Ingredients

  • Vegetable Frying oil
  • 1 1/2 cups milk
  • 1/2 cup peanut butter
  • 2 eggs
  • 2 1/3 cups flour
  • 1 teaspoon baking powder
  • Icing sugar
  • Grape jelly

Steps

  1. Heat oil to 375 degrees.
  2. In a large bowl, beat milk, peanut butter and eggs together. Add flour and baking powder and beat until smooth.
  3. Pour into a freezer bag and snip the corner, or use a funnel. While covering the funnel hole with one hand, squeeze in 1 cup of batter. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. Remove and drain on paper towels.
  4. Place the grape jelly in the microwave to loosen up. I like placing it in a squeeze bottle to then squirt it over the completed funnel cakes, top with icing sugar.
