Peanut Butter Fudge Bars

You don't know what "fudging delicious" is till you've tasted a slice of this nutty pie.

Ingredients

Peanut Butter Fudge

  • 1 ½ cups powdered sugar
  • 55g unsalted butter
  • 1 cup brown sugar
  • ½ cup cream
  • ½ tsp salt
  • ½ cup peanut butter
  • ½ teaspoon vanilla extract

Pie Crust

  • 20 Oreos
  • 1 tablespoon butter, melted

Caramel

  • 300g chewy caramel candies
  • ½ cup cream
  • ½ stick butter

Marshmallow Layer

  • 1/3 pound large marshmallows

Chocolate Fudge

  • 1 ½ cups confectioners' sugar
  • ½ cup brown sugar
  • 1 ½ cups cream
  • 2 tablespoons butter
  • ½ teaspoon salt
  • 4 ounces unsweetened chocolate
  • ½ teaspoon vanilla extract

Decorations

  • 1 cup chopped snickers bars

Steps

Peanut Butter Fudge

  1. Add all the ingredients to a large microwave safe bowl and microwave for 20 seconds at a time, stirring each time until smooth. Pour into the baking tin and spread evenly. Place in the fridge for 20 minutes to set.

Pie Crust

  1. To make the crust add the Oreos to a food processor and blitz until they resemble crumbs. Stop the mixer and add the melted butter. Pulse to coat the crumbs in the melted butter.
  2. Pour the wet crumbs into a 9” x9” square cake tin lined with baking paper and use the back of a spoon to evenly spread and press the crumbs into the bottom of the tin. Chill for for 30 min in the fridge.

Caramel

  1. Add all the ingredients to a large microwave safe bowl and microwave for 20 seconds at a time, stirring each time until smooth. Pour into the baking tin and spread evenly. Place in the fridge for 20 minutes to set.

Marshmallow Layer

  1. Add the marshmallows in a large microwave safe bowl and microwave for 20 seconds at a time, stirring each time until smooth. Pour into the baking tin. Spray a small offset spatula with some oil spray and spread evenly. Spraying the spatula with oil will help prevent the sticky marshmallow from sticking to the spatula. Place in the fridge for 20 minutes to set.

Chocolate Fudge

  1. Add the powdered sugar, brown sugar, cream, butter and salt into a large microwave safe bowl and microwave for 20 seconds at a time, stirring each time until smooth. Then add the dark chocolate and vanilla extract and stir until smooth and chocolate is completely melted. Pour into the baking tin and spread evenly.
  2. Sprinkle chopped snickers bars on top before placing in the fridge for 1 hour so that everything sets completely. Use a large knife to cut into bars before serving.
