Peanut Butter and Pickle Sandwich

Ingredients

  • 4 Tablespoons chunky peanut butter

  • 2-3 Butter or dill pickles

  • 2 slices bread

Instructions

  1. Toast bread. Spread peanut butter on both sides and slices pickles thinly. Assemble and enjoy!

- Peanut butter and pickle sandwich is totally the new PBJ. So this is the simplest thing ever. We always think of peanut butter and jelly, but how about peanut butter and pickle? It's just as easy as peanut butter and jelly, but in my opinion, better. One of the amazing things about this recipe is the contrast in texture. So first of all, yes I chose crunchy peanut butter because I am a crunchy peanut butter girl, but even still, the crunch of the pickle is totally different than the crunch the nuts, so you've got the creaminess, and the crunchiness of the peanut butter, and then the crisp crunch of the pickle, it's amazing. The pickles add this nice vinegary flavor, and then the peanut butter gives in that salty flavor, so that's actually why I prefer peanut butter and pickle sandwiches over peanut butter and jelly, because PBJ's, that's really sweet, I don't always want that for lunch. Peanut butter and pickle though, now we're talking. So, you just slice up the pickle. I like dill pickles for this. But you know, if you prefer other kinds of pickles, give it a go, I'm sure it would still be delicious. And then, you can eat it as such, open-faced, or make it a full on peanut butter and pickle sandwich. PB and P, get it, because like PBJ but PBP. So when I tell people that one of my favorite snacks is peanut butter and pickle sandwiches, there are one of two reactions. One, is you're crazy, I've never heard of that. That's so weird. The other reaction is, oh yeah, I grew up eating those. So which one are you? Either way, it's so good, and you've gotta give it a try. That was a big bite. So beyond the texture, the flavors are so spot on. We've got the vinegar punch of the pickle with the saltiness of the peanut butter. They're really complimentary flavors. More savory than a peanut butter and jelly which is what I want when I reach for an afternoon snack, right? I just love this. I could have it every day. Sometimes I do.
