Peanut Butter Rice Krispie Treat Strawberry Ice Cream Sandwiches

Ingredients
PB Cereal Ice Cream Sandwiches
- 4 tbsp unsalted butter
- 1 (10-ounce) bag white marshmallows
- ½ cup smooth peanut butter
- 3 cups rice bubbles
Ice Cream
- 600ml thickened/whipping cream
- ½ cup powdered sugar
- 1tsp vanilla extract
- 1 cup strawberries
Decorations
- ½ cup freeze dried strawberries, crushed
Steps
PB Cereal Ice Cream Sandwiches
- Add the butter and marshmallows to a large microwave safe bowl and microwave for 40 seconds. Use a whisk to mix until well combined. Add the peanut butter and mix.
- Add the rice bubbles and mix into the marshmallow mixture until well combined.
- Take the frozen ice cream out of the loaf tin and unwrap the plastic wrap. Set aside.
- Place half of the rice crispy treat mixture into the loaf tin and press down until flat and even.
- Place the ice cream on top and then add the rest of the rice mixture on top of the ice cream and flatten using a rolling pin.
- Cut up using a large knife and add freeze dried raspberries on the exposed ice cream on each [piece before serving.
Ice Cream
- To make the ice cream add the strawberries into a food processor and pulse until crushed. Set aside.
- Add the cream, vanilla extract and powdered sugar into a large mixing bowl and use an electric mixer to whip to soft peaks. Add the crushed strawberries and whip to stiff peaks.
- Line the bottom of a load tin with plastic wrap and add the whipped strawberry cream. Use a spatula to flatten the top. Freeze for 4-5 hours.
