Peanut Butter Rice Krispie Treat Strawberry Ice Cream Sandwiches

  • Rice Crispy Treats
  • 4 tbsp unsalted butter
  • 1 (10-ounce) bag white marshmallows
  • ½ cup smooth peanut butter
  • 3 cups rice bubbles
  • Ice Cream
  • 600ml thickened/whipping cream
  • ½ cup powdered sugar
  • 1tsp vanilla extract
  • 1 cup strawberries
  • Decorations
  • ½ cup freeze dried strawberries, crushed


  1. Ice Cream
  2. To make the ice cream add the strawberries into a food processor and pulse until crushed. Set aside.
  3. Add the cream, vanilla extract and powdered sugar into a large mixing bowl and use an electric mixer to whip to soft peaks. Add the crushed strawberries and whip to stiff peaks.
  4. Line the bottom of a load tin with plastic wrap and add the whipped strawberry cream. Use a spatula to flatten the top. Freeze for 4-5 hours.
  5. Rice Crispy Treats
  6. Add the butter and marshmallows to a large microwave safe bowl and microwave for 40 seconds. Use a whisk to mix until well combined. Add the peanut butter and mix.
  7. Add the rice bubbles and mix into the marshmallow mixture until well combined.
  8. Take the frozen ice cream out of the loaf tin and unwrap the plastic wrap. Set aside.
  9. Place half of the rice crispy treat mixture into the loaf tin and press down until flat and even. Place the ice cream on top and then add the rest of the rice mixture on top of the ice cream and flatten using a rolling pin.
  10. Cut up using a large knife and add freeze dried raspberries on the exposed ice cream on each [piece before serving.
