Persimmon Pudding

If you like persimmons, you'll love this creamy, fruity pudding.

Ingredients

  • 2 ripe persimmons
  • Whole milk (amount should equal half the amount of persimmon flesh)
  • 1/2 teaspoon sugar
  • Persimmon paste (puree ripe persimmon in a blender)
  • Mint leaf

Steps

  1. Cut off the very top of the persimmons and scoop out the flesh with a spoon, making sure not to take out too much flesh.
  2. In a blender, combine the persimmon flesh, milk and sugar and mix until combined.
  3. Pour into persimmon cups and refrigerate overnight.
  4. Pour persimmon paste over the pudding before serving. Garnish with mint leaf if desired.
