Pickle PB&J

Ingredients

  • 4 slices white bread

  • 1/2 cup peanut butter

  • 1/2 cup dill pickles, sliced

Instructions

  1. Spread peanut butter on one side of one piece of bread. Add an even layer of pickles and sandwich 2 slices of bread together.

Pickle Ham Roll Ups

Ingredients

  • 12 slices smoked ham

  • 2 cups cream cheese

  • 6 dill pickles

Instructions

  1. Spread out cream cheese on 2 slices of slightly overlapping ham. Add pickle, and roll into both slices. Press shut. Slice and serve.

Stuffed Cheese Pickles

Ingredients

  • 12 dill pickles, hollowed

  • 2 cups cheese dip

  • 12 wonton wrappers

  • Oil, for frying

  • Sriracha mayo:

  • 1/2 cup mayonnaise

  • 1/8 cup Sriracha

Instructions

  1. Heat oil in a Dutch oven until 350 degrees.

  2. Add cheese to a piping bag, and pipe cheese into pickle holes. Roll pickles in wonton wrappers and fold the sides in. Fry until golden brown.

  3. Remove to a cooling rack. Serve with Sriracha mayo.

Pickle Cupcakes

Ingredients

  • 4 ounces unsalted butter, softened

  • 1 cup sugar

  • 2 eggs

  • 1 teaspoon vanilla

  • 1/4 cup pickle juice

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 cup sour cream

  • 1/4 cup chopped pickles

  • Vanilla frosting

  • 12 dill pickles, for garnish

Instructions

  1. Preheat oven to 350 degrees.

  2. Cream butter and sugar in a large bowl with a mixer. Add eggs, vanilla and pickle juice, and mix until combined. Add flour, baking powder and salt. Mix until smooth. Fold in sour cream and chopped pickles.

  3. Add batter to lined cupcake tins, filling them three-quarters of the way. Bake 20 to 25 minutes or until a toothpick comes out clean.

  4. Top with vanilla frosting and garnish with dill pickles.

Pickle Cupcakes

Dill Pickle Martini

Ingredients

  • 8 ounces vodka

  • 1 teaspoon dry vermouth

  • 3 tablespoons dill pickle juice, chilled

  • Gherkins to garnish

Instructions

  1. Fill martini shaker halfway with ice. Add vodka, vermouth and pickle juice. Shake well, strain into a martini glasses. Garnish with gherkins or pickle spears.
