Pigs in a Blanket Burger

Pig in a blanket for breakfast? Yes, with these delicious sausage and savory cheddar biscuit sandwiches.


  • For the biscuit:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1 cup sharp cheddar, divided
  • 1 stick butter, cubed
  • 3/4 cup half-and-half
  • 1 egg, whisked
  • Mustard seeds
  • Whole-grain mustard
  • For the sausage:
  • 1 pound pork sausage
  • 1 teaspoon soy sauce
  • 1 teaspoon rice wine vinegar
  • 1 clove garlic, minced
  • 2 teaspoons sugar
  • 1/8 teaspoon cinnamon
  • 1 teaspoon Smoked paprika


  1. Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, combine the flour, baking powder, salt, sugar; mix together.
  3. Add in the butter, and, using your hands or your pastry cutter, work the ingredients into each other until the butter is the size of peas.
  4. Add in the half-and-half and mix until just combined, add in cheese until just combined.
  5. Dump the dough out onto a well-floured board and knead lightly into a rectangle 1/3-inch thick.
  6. Cut out rounds with a 2 1/2-inch round cutter and place on baking sheet.
  7. Brush the tops of the biscuits with egg wash and sprinkle with mustard seeds.
  8. Bake for 20-22 minutes, until the tops are browned and the insides are firm.
  9. Preheat a nonstick skillet over medium-high heat.
  10. In a small bowl, combine the sausage ingredients. Form mixture into 3-inch patties and cook for about 4 minutes on each side until cooked through.
  11. Slice the biscuits in half, spread with whole-grain mustard and top with a sausage patty.
