Ingredients

  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup cane vinegar
  • 2 tsp whole peppercorns
  • 3 cloves garlic
  • 2 pcs bay leaves
  • 1 kg pork loin, cut into cubes
  • 3 tbsp canola oil
  • 1/2 cup pineapple chunks
  • 2 cups water

Steps

  1. In a bowl, combine soy sauce, pineapple juice, vinegar, peppercorns, garlic, and bay leaves. Marinate pork for 1 hour.
  2. In a pot with hot oil, brown the pork and add remaining marinade, pineapple chunks, and water. Bring to a boil and simmer over low heat covered for 45 minutes. Remove the cover and simmer for an additional 10 minutes to reduce the sauce.
