Ingredients

Thousand Island Sauce

  • 1/4 red onion
  • 4 small pickles
  • 1 boiled egg
  • 2 tablespoons mayonnaise
  • 2 tablespoons ketchup
  • Salt
  • Pepper
  • Lemon juice
  • Shredded red cabbage
  • Vegetable oil for cooking

Burger Buns

  • 200 grams flour
  • 150cc milk
  • 20 grams butter
  • 20 grams sugar
  • 1 teaspoon instant dry yeast
  • 1 tablespoon raspberry powder
  • 1/2 teaspoon red food coloring
  • Extra flour for dusting

Shrimp Katsu

  • 200 grams shrimp
  • 1 tablespoon potato starch
  • 2 tablespoons mayonnaise
  • Salt
  • Pepper
  • 1 egg, beaten
  • Panko bread crumbs

Steps

Thousand Island Sauce

  1. Combine all the ingredients for the Thousand Island Sauce and mix well. Set aside.

Burger Buns

  1. In a bowl, combine all the ingredients for the burger buns and mix well. Knead until the dough comes together.
  2. Let the dough rise in a warm place for 30 minutes.
  3. Divide dough into four and mold in round shapes. Lightly cover with a cloth and let them rest for 10 minutes.
  4. Lightly dust the dough with flour and bake for 15-18 minutes at 150 degrees C.

Shrimp Katsu

  1. Clean, shell and devein shrimp. Divide into two batches. Finely chop one batch of shrimp. Coarsely chop the other half.
  2. Season shrimp with salt, pepper and mayonnaise. Add in potato starch and mix to combine. Shape into patties.
  3. Dip the patties into the beaten egg, followed by a good coating of panko bread crumbs.
  4. Fry in hot oil until crispy and golden brown.
  5. Place shredded cabbage and shrimp katsu on top of the buns.
  6. Top with a generous portion of the sauce.
