Plantain Flan

When life gives you plantains, turn them into flan.

Ingredients

Plantain Flan

  • 1 cup sugar (for caramel)
  • 5 1/2 oz sweet plantain
  • 2 eggs
  • 1 1/4 oz sugar
  • 4 1/2 oz milk
  • 1 tsp vanilla extract
  • 3 1/2 heavy cream
  • 2 tbsp icing sugar

Caramelized Sweet Plantain

  • 1 cup sweet plantain
  • 1 1/2 tbsp butter
  • 1/4 cup brown sugar
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup water

Steps

Plantain Flan

  1. In a small saucepan, melt sugar until golden brown. Pour hot syrup into 4 individual baking molds, turning each dish to evenly coat the bottom and sides. Set aside.
  2. Place sliced sweet plantain, eggs, milk, sugar, and vanilla extract into a blender. Blend until all ingredients are well combined and the mixture is smooth.
  3. Preheat oven to 375°F. Pour evenly into the molds and place them into a tray filled with water.
  4. Cover it with foil paper and bake for 40 minutes. Let them cool in the refrigerator before serving with chantilly cream.

Caramelized Sweet Plantain

  1. Melt the butter in a frying pan.
  2. Cut the sweet plantain into medium-size slices, place them in the frying pan and turn them a couple of times until they turn to a nice brown color.
  3. Add brown sugar, salt, ground cinnamon, and water, and let the plantains caramelize until they are soft and tender.
