Salmon Poke Bowl

Ingredients

  • Poke:
  • 1 lb raw salmon, cubed
  • ¼ cup soy sauce
  • 1 tbsp sesame oil
  • 2 tsp rice wine vinegar
  • ½ tbsp sriracha
  • Avocado cubes
  • 2 tbsp chives, chopped
  • 1 tsp black sesame seeds
  • Toppings & base:
  • Cucumber, thinly sliced
  • Red cabbage slaw (toss with salt & vinegar 1 tbsp)
  • Edamame
  • Cooked sushi rice

Steps

  1. Combine poke ingredients in a bowl. In a serving bowl, add the rice and top with poke and toppings.
