• 2 tablespoons fresh thyme
  • 2 tablespoons rosemary
  • 1 teaspoon smoked paprika
  • 5 cloves garlic, minced
  • Salt, to taste
  • 1 tablespoon olive oil
  • 1 pork belly
  • 1 cup honey


  1. Preheat oven to 390 degrees.
  2. In a bowl, mix the thyme, rosemary, paprika, garlic, salt and olive oil.
  3. Arrange the meat in a baking dish, and rub half of the seasoning on the meat side of the pork belly. Turn meat over, make shallow cuts on the skin, then spread on the rest of the seasoning.
  4. Cover with foil and bake for approximately 1 hour. Remove from oven, remove foil, brush with honey and bake for another 30 minutes before serving.
