Pork Meatloaf in Filo Pastry
When your traditional meatloaf feels too "traditional", why not try this pork version wrapped in filo dough with four hard-boiled eggs baked in.
Ingredients
- 1 pound pork
- 1 small onion, minced
- 2 cloves garlic, minced
- 1/2 teaspoon spicy paprika
- Salt, to taste
- 1 egg
- 1 cup bread flour
- Filo pastry dough
- 4 hard-boiled eggs
- 5 ounces mozzarella cheese, grated
- 1 egg yolk, beaten with 1 tablespoon of oil
Steps
- Preheat oven to 350 degrees.
- Grind the pork in the food processor.
- Place ground pork in a bowl and add the onion, garlic, paprika, salt, egg and bread flour. Mix well.
- Lay out filo dough and place half of the meat mixture on top. Place hard-boiled eggs on top of meat and sprinkle with cheese. Top with remaining meat mixture.
- Make cuts in the sides of the filo dough, forming strips. Fold the pastry strips over top of the meat mixture, creating a braided look.
- Brush with the egg and oil mixture. Bake for 40 minutes until crust is golden brown.
