Stuffed Portuguese Bread

Stuffed with tomato sauce, peppers, cheese and boiled eggs, this flaky filled bread is basically a meal.


  • 4 teaspoons yeast
  • 1/2 cup warm water
  • 2 cups wheat flour, divided
  • 1 1/2 tablespoons sugar
  • 1 egg
  • 3 1/2 tablespoons oil
  • Salt
  • 4 tablespoons tomato paste
  • 1 green pepper, cut into strips
  • 1/2 yellow pepper, cut into strips
  • 2 1/4 cups mozzarella cheese
  • 3 hard-boiled eggs
  • 2 tablespoons oregano
  • 1 egg yolk, beaten


  1. In a medium bowl, combine the yeast, water, 1 cup of flour and sugar. Let sit for 20 minutes, then add 1 egg and the oil; mix well. Gradually add the remaining flour, then the salt. Stir to combine, then knead for 15 minutes. Cover with a clean cloth and let dough rest for 30 minutes.
  2. On a work surface sprinkled with flour, roll out dough into a large circle.
  3. Transfer dough to a Bundt cake pan, covering the entire bottom and allowing dough to hang over the sides.
  4. Brush inside of dough with tomato paste. Add green and yellow peppers, mozzarella, hard-boiled eggs and oregano.
  5. Fold the dough over the filling, and brush the outside with egg yolk. Bake at 350 degrees for 40 minutes. Let cool slightly before slicing and serving.
