• 6 medium potatoes
  • Olive oil, for cooking
  • Salt and pepper, for seasoning
  • 1 cup Parmesan cheese, grated
  • 12 to 14 slices of mozzarella cheese (14 ounces)
  • 2 cups mozzarella cheese, grated
  • 5 to 7 slices of smoked provolone cheese
  • 1 cup tomato sauce
  • For Toppings:
  • 5 to 8 pepperoni slices
  • ½ cup Parmesan cheese, grated
  • Hand-held potato masher, optional


  1. Preheat oven to 400 degrees.
  2. On a tray, place the potatoes, and rub with olive oil, salt, and pepper.
  3. Place in the oven. Bake for 60 to 90 minutes until the skins are crunchy, and the insides are soft.
  4. When the potatoes are cool, cut in half and scoop out the middle.
  5. In a bowl, place the scooped out middles.
  6. In an iron skillet, place the potatoes skins. Make sure they line the sides of the skillet.
  7. In another bowl, using a hand-held potato masher, or by hand, mash the insides of the potatoes.
  8. Mix in the grated Parmesan cheese, and combine well. Next, scoop the mixture into the potatoes skins, and press them firmly together to create a deep crust.
  9. Place in the oven. Bake the crust for 30 minutes.
  10. Add the slices of mozzarella on top, then the grated mozzarella, and topped with the slices of smoked provolone.
  11. Next, add a thin layer of tomato sauce on top. Add the pepperoni slices, and top it off with a sprinkle of parmesan cheese.
  12. Cook for 20 minutes until golden. Allow to cool before serving. Enjoy!
