Make light, fluffy pancakes loaded with protein using only 4 ingredients including eggs, banana, oats and protein powder.

Winner’s Protein Pancakes

Ingredients

  • 1 banana, roughly chopped

  • 1 scoop (30g) vanilla protein powder

  • 1 egg

  • 1 ounce (25g) rolled oats

  • 1 tablespoon coconut oil, divided

  • Full-fat Greek yogurt

  • Blueberries

  • Raspberries

Instructions

  1. In a blender, combine the banana, protein powder, egg and oats.

  2. In a nonstick frying pan over medium heat, heat the coconut oil.

  3. Pour little puddles of batter into the pan, making 4 pancakes in the pan at once. Cook for about 1 minute on each side.

  4. Serve with a dollop of yogurt and a few berries.

- Hi guys, I'm Joe Wicks, the body coach, author of Lean in 15, 15 minute meals to get you lean and healthy. And I believe that everyone can stay fit and healthy just by cooking simple home cooked food. And here's a recipe for you, my winner's protein pancakes. Let's get started. Step one, then, nice and simple this is my healthy version of breakfast pancakes using four ingredients, banana, oats, egg, and some whey protein. Top with some Greek yogurt, some fresh berries, and it's a really good quick and easy breakfast and it's gonna get you lean. First thing's first, take yourself a nice ripe banana, slice it up, we're gonna throw it into the blender, add all our ingredients, whiz it up, and that's gonna make our pancake batter. Next up, little handful of oats. So I've just got some dried porridge oats. This just give it a little bit more extra carbohydrates. It's just what your body needs, gives your loads of energy, makes you feel awesome for the whole day. Now I'm gonna add one egg to the mixture, get that in there. A scoop of vanilla whey protein. You can us any flavor protein but I think the banana and the vanilla goes really well together. So stick the lid on, give that a little whiz. This is gonna make our pancake batter. Brilliant so I've got my pancake mix, I'm not gonna put a little bit of coconut oil in the griddle pan. It's one of my favorite things to cook with. If you're not a fan of coconuts you can always use butter or some olive oil. Then take your batter and just pour it into tiny little circles. I'm gonna do four little round ones so I can make a big stack. So there's one. Perfect, get them nice and round. You probably want to give your pancakes about one, one and a half minutes on each side and get yourself a spatula and give it a little flip. That's perfect. They normally come out a little bit burnt the first time, but I'm really happy with that. So if you're someone who loves pancakes but thinks they're unhealthy, this is a much healthier option. These are gonna give you carbohydrates and protein, really great to have after you've done a workout, it's gonna give you loads of energy and keep you full up and make you feel awesome. That's why I call them winner's protein pancakes. Now for my favorite part, we're gonna start to stack the pancakes and stop it with my favorite berries. You can use blueberries, raspberries, strawberries, but whatever you like and that's the fun thing about making pancakes, you can top it with whatever you want. So let's get them nice in the center of the plate, make a nice tall stack. So there you have it, look. Four lovely protein pancakes. Now for my favorite part, the topping. So I've got a lovely dollop of Greek yogurt, so a nice big dollop straight on top of the pancakes. Get on there, look at that. Then we're gonna add some berries. I've got some blueberries and raspberries, my favorite. You could have strawberries, could have some nuts, some sesame seeds, some flat seeds anything you want to top you pancakes, really. But be generous. Just get them all on the top. And that's it. Next I'm gonna have some healthy protein pancakes, give this recipe a go. I call them my winner's protein pancakes 'cause once you've done a workout, you eat these, you're gonna feel like an absolute champ and that's gonna get you fit, healthy, and lean.
