- If you think that making pizza at home from scratch is hard, let me prove you wrong. I'm using puff pastry for an incredibly crispy base with some awesome toppings. Let's make this. Now I love making fresh pizza dough from scratch, but sometimes I just don't have the time or tenacity to do so. Now this recipe uses a bit of a cheat, but it makes it dead easy so this is just shop bought regular ready rolled puff pastry. If you can, go for the one that's all butter, just because it has a better flavor. We're just gonna pre-cook this by popping it on a baking sheet, and then we're just gonna brush it with egg wash. Now this will give it a lovely lovely color when it cooks. Just whisk this up. And then just paint it on. So I'm using a pastry brush, but you know you could just rub it over with a spoon if that works. Next we're just gonna prick it with a fork all over, and this will stop it from rising up too much. Once you've done that, pop it in the over at 180 degrees for about eight to 10 minutes just to pre-cook. So whilst the base pre-cooks I'm gonna make one of the incredible toppings. Now, pesto is one of the easiest things to make at home, but often we rely on the shop bought stuff, but this tastes so much better. So just gonna tear in a handful of basil leaves, gonna put in a bit of salt, some pepper, and these. So these are pine nuts. Now these are an incredible flavor and a bit of texture as well to your pesto, give it a bit of a bite. Just gonna mix it in, a little bit of extra virgin or good quality olive oil. I just start to really mix this together. Gradually incorporating all that basil. To this we're also gonna add some lovely Parmesan cheese. Grate this quite finely into the mix. Add in a spot more olive oil. And again really incorporate this well. So I'm just gonna set that to one side. Now to make the tomato sauce. You could just use chopped tomatoes with basil and some herbs, but I'm gonna use this. This is passata, so it's parsed tomatoes. It basically just been passed through a sieve so it's really silky smooth. To add a little bit more flavor however, I'm gonna add in some red pesto. So put a good tablespoon of that. Generous amount of passata. Mix that through. A little bit of salt, little bit of pepper. And this is ready to form the base of our pizzas. So after about eight minutes, you can see that it's nicely risen and it's now time to garnish our pizza base. So we've got our incredible mixture of passata and tomato pesto. I'm just gonna drizzle that. Be quite generous with this at this stage. So now for the toppings, and I'm actually doing a vegetarian pizza, we're just gonna tear up some lovely mozzarella. I'm also gonna add a little bit of goat's cheese. Now this is of course optional. I'm using a hard sort of crumbly one. Gonna go with some Parmesan as well. Just grate some of that. A few basil leaves. So what happens now, this goes back in the oven for another ten minutes or so or just until the cheese is melted. So after about 10 minutes in the oven, it looks and smells fantastic. The cheese is nicely melted, and all I'm gonna do is finish it with some toppings. So I've got some incredible sun-blushed tomatoes. These haven't been dried as much as your conventional sun-dried ones, just out in the sun. But they're incredibly sweet and really really juicy, so pop some of those on top. And I sprinkle over just a few pine nuts. And then just drizzle some of this over. So there we have it, it looks so good. I'm just gonna have to try a little bit. That tastes absolutely incredible. It's so easy to make but will rival the best pizza out there. So there it is guys, you've seen how easy it was to make. Forget the dough, don't worry about that. Use puff pastry, incredibly crispy base, oozing cheese on top.
