Pulled Pork Lunch Wrap

Even if your pulled pork has to be cooked overnight, your next-day lunch will be worth the wait.

Ingredients

  • 1 pork butt/ shoulder (2.5 to 3 pounds)
  • 2 tablespoons Paprika
  • 2 tablespoons Garlic powder
  • 2 tablespoons Brown sugar
  • 2 teaspoons Dry mustard
  • 2 teaspoons Coarse sea salt
  • 4 small onions, sliced (or 3 medium)
  • 1/4 cup mustard
  • 1/4 cup brown sugar
  • 1/2 cup ketchup
  • 1 teaspoon Worcestershire
  • 1/2 teaspoon chilli powder
  • 1/4 teaspoon cayenne
  • Salt and pepper
  • Shredded cheddar cheese
  • Mayo
  • Lettuce
  • Flour tortillas

Steps

  1. Rub the pork with paprika, garlic powder, brown sugar, dry mustard and salt.
  2. Place the onion slices at the bottom of a slow cooker and layer the pork over top.
  3. Cook for 8 hours (overnight) on the low setting.
  4. Remove the pork from the cooker and begin pulling it with two forks.
  5. Set aside.
  6. Sauce: Place the onions from the pork in a saucepan, dump the fat.
  7. Add mustard, brown sugar, ketchup, Worcestershire sauce, chilli powder, cayenne pepper and salt and pepper.
  8. Simmer for 30 minutes until thickened. Pour over the pork and toss to combine.
  9. To assemble, take a tortilla and spread with mayo, layer lettuce and sprinkle cheese.
  10. Then spoon a generous helping of pork in the centre.
  11. Wrap up like a burrito and then wrap in wax paper
