To melt the chocolates: Place in the microwave stirring after every 15 seconds or until smooth.
Separate the sandwich cookie into two portions.
Dip a lollipop stick into the orange candy melts and place onto the cream-side of the cookie.
Sandwich with the other half and press down firmly. If the cookie breaks, just glue it together with some of the melted candy melts.
Let the cookies firm up, about 15 minutes.
In the meantime, using tweezers, dip the pretzel bits into the green candy melts and set on a parchment paper sheet to firm up.
Once the cookies have set, dip them into the remaining orange candy melts and place onto a parchment lined tray.
Quickly place atop the edible eyes and the green-covered pretzel bits as the stem and let the chocolate harden.
Next, dip the end of a skewer into the melted dark chocolate and make a zig-zag pattern on the surface of the pumpkin to form a face.
Let the cookie firm up before serving.
