Purple Yam Mochi Pancakes

Ingredients

Purple Yam Mochi Pancakes

  • 200 grams pancake mix
  • 250 milliliters milk
  • 2 blocks mochi
  • 1 egg
  • 2 tablespoons purple yam powder

Toppings

  • Grapes
  • Blueberries
  • Blackberries

Sauce

  • 200 milliliters milk
  • 4 tablespoons condensed milk
  • 2 tablespoons butter
  • 1 tablespoon purple yam powder
  • 1 tablespoon flour

Steps

Purple Yam Mochi Pancakes

  1. Cut each block of mochi into 6 cubes. In a bowl, combine mochi and 150 milliliters milk and microwave at 600 watts for 4-5 minutes. Mix with a wire whisk until smooth.
  2. Combine egg, pancake mix and purple yam powder and mix to combine. Add in 100 milliliters milk and mix until smooth.
  3. Pour a little oil into a frying pan.
  4. Cook pancakes on both sides over low heat.
  5. Transfer pancakes to plate.
  6. Serve pancakes with the sauce and top with fruits.

Sauce

  1. In a saucepan, combine butter, flour and purple yam powder and heat over low heat until melted. Add in condensed milk and milk and mix well to create the sauce.
