Raclette Quiche

Cheesy, flaky and made with 3 types of meat — beef, prosciutto and ham — this is the ultimate quiche.


  • 4 eggs
  • 1 cup milk
  • 1 cup crème fraîche
  • Pepper
  • 1 sheet puff pastry
  • 2 slices ham, minced
  • 2 slices prosciutto, minced
  • 4 slices dried beef, minced
  • 12 slices raclette cheese, sliced in half


  1. In a medium bowl, whisk together eggs, milk, cream and pepper.
  2. Add puff pastry to a greased and floured round baking pan and trim off the extra. Using a fork, pierce along the bottom of the crust.
  3. Pour the batter into the pan. Add the various meats and top with raclette slices. Bake at 410°F for 40 minutes.
