Rainbow Mini Cakes

Can't decide what kind of cake you want? Try this matcha, red velvet and chocolate rainbow mini cake.

Ingredients

  • Matcha cake:
  • 3/4 cup + 2 tablespoons sugar
  • 1 1/4 cups all-purpose flour
  • 1 tablespoon matcha
  • 3/4 teaspoon each: baking soda, baking powder, kosher salt
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/4 cup flavorless oil, like canola
  • 3/4 tablespoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3/4 cup boiling water
  • Red velvet cake:
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 tablespoon unsweetened cocoa powder
  • 1/2 cup coconut oil (unrefined for a hint of coconut flavor, refined for no coconut flavor)
  • 1 cup sugar
  • 1 large egg
  • 1 tablespoon red food coloring
  • 1 1/2 teaspoon vanilla bean paste or extract
  • 1/2 teaspoon vinegar
  • 1/2 cup buttermilk
  • Chocolate cake:
  • 3/4 cup + 2 tablespoons sugar
  • 3/4 cup + 2 tablespoons flour
  • 1/2 cup unsweetened cocoa powder
  • 3/4 teaspoon each: kosher salt, baking powder, baking soda
  • 1 large egg
  • 1/2 cup buttermilk
  • 1/2 tablespoon vanilla extract
  • 1/4 cup flavorless oil
  • 1/4 cup + 2 tablespoons boiling water
  • Frosting:
  • 2 cups butter
  • 5 cups powdered sugar
  • 1/4 cup heavy cream
  • 2 teaspoons vanilla
  • Pinch of salt

Steps

  1. Preheat oven to 350°F. Line 3 quarter sheet pans with parchment paper.
  2. Matcha cake: In a large bowl, whisk together all the dry ingredients. In a medium bowl, whisk together all the wet ingredients except for the boiling water.
  3. Whisk the wet ingredients into the dry ingredients, then stir in the boiling water. (It will be a very thin batter.)
  4. Red velvet cake: In a medium bowl, whisk together the flour, baking soda, salt and cocoa powder.
  5. In a separate bowl, whisk together the coconut oil and sugar until pale and fluffy, 3-4 minutes. Add the egg and mix to combine. Mix in the food coloring, vanilla and vinegar. Add the cocoa powder and dry ingredients, then the buttermilk; whisk until just combined.
  6. Chocolate cake: In a large bowl, whisk together the sugar, flour, cocoa powder, salt, baking powder and baking soda.
  7. In a medium bowl, whisk together the egg, buttermilk, vanilla and oil. Add the wet ingredients to the dry ingredients and stir to combine. Whisk in the boiling water.
  8. Pour each batter into a separate cake pan, and bake until a toothpick inserted into the center comes out clean. Begin checking for doneness at 20 minutes.
  9. Blend frosting ingredients until smooth.
  10. Cut out 2 1/2-inch circles of the cakes, and stack 'em up with buttercream between the layers. Decorate how you wish!
