Rainbow Puff Pastry

This chocolatey puff pastry may be the pot of gold at the end of the rainbow.

Ingredients

  • Coconut oil
  • Many different colors of melted chocolate, or candy melts
  • 1 puff pastry
  • One egg beaten + 1 tablespoon water or milk (for egg wash)

Steps

  1. Preheat oven to 400°F. Grease a loaf pan with coconut oil.
  2. Microwave your chocolate by color and transfer each to a separate Ziploc bag (you should have many Ziplocs of melted chocolate).
  3. Squeeze melted chocolate by color into the loaf pan to create a rainbow chocolate bar. The end result should be about 1/2-inch thick. Put in fridge or freezer to cool.
  4. Roll out puff pastry, using a rolling pin to lengthen it so that the chocolate bar will fit easily inside. Place your cooled rainbow chocolate bar in the middle of the pastry.
  5. Cut slits into diagonal strips around the bar. Cut out two tabs at the bottom to cradle the ends of the chocolate while baking so it doesn't ooze out the ends.
  6. Start weaving by overlapping the strips on top of each other one by one. Use egg wash as glue if necessary. Transfer to a baking sheet lined with parchment paper.
  7. Bake for 15 minutes. Let cool before slicing. Optimal goal: oozing rainbow chocolate!
