It's a "berry" refreshing take on the classic mojito.
1 cup raspberry puree
1/4 cup simple syrup
4 grams agar agar
3 cups vegetable oil, chilled
In a medium saucepan, add the raspberry puree, simple syrup and agar agar. Bring to a boil and remove from heat. Using a syringe or pipette, pull up the raspberry mixture and slowly drop into the cold oil, forming pearls. Once set, remove from oil and transfer to a water bath to rinse off the oil.
In a highball glass, add rum, lime juice, simple syrup, soda water and raspberry pearls. Garnish with mint and a lime wedge.
