• 2 pears, ripe
  • 3 cups red wine
  • 1 cinnamon stick
  • 3 cloves
  • 1 vanilla pod, scraped
  • 1 piece orange peel
  • 2 allspice berries
  • 1 bay leaf
  • 3 black peppercorns
  • 1/4 cup sugar
  • Whipped cream, to serve


  1. In a small pot, combining all ingredients except pears and bring to a boil. Lower heat and simmer for about 5 minutes to infuse flavors.
  2. In the meantime, peel pears carefully, maintaining their shape, leaving the stem and trimming the bottom.
  3. Place pears in pot, making sure they are submerged, and simmer, covered, for at least 30 to 40 minutes, until tender.
  4. Transfer to a plate to let cool. Strain 1 cup of the liquid back into the pot.
  5. Put the pot with the one cup of liquid back onto medium-high heat to reduce, and cook until syrupy.
  6. Drizzle pears with syrup, and serve with whipped cream.
