Roast Peking-Style Whole Chicken

Ingredients

  • 1 whole chicken
  • 1 beer can
  • Welsh onion, thinly sliced
  • Cucumbers, thinly sliced
  • Spring roll wrappers
  • Marinade:
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet soybean paste
  • 1 tablespoon sugar
  • Sauce:
  • 1 tablespoon sweet soy bean paste
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • 2 teaspoons sugar

Steps

  1. Wash and clean the chicken.
  2. Combine ingredients for the sauce and set aside.
  3. Push the beer can into the cavity of the chicken.
  4. Combine ingredients for the marinade and spread onto the chicken.
  5. Bake for 1 hour at 200 degrees C.
  6. To serve, slice the chicken thinly. Serve with sliced welsh onions, cucumbers, spring roll wrappers and sauce.
