Roasted Cauliflower

Ingredients

  • 1 cauliflower
  • 1 1/4 cups grated Parmigiano Reggiano cheese
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons butter, softened
  • 1 tablespoon tomato paste
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

Steps

  1. Preheat the oven to 425F.
  2. Cut down the stem of the cauliflower so that it stands flat and place stem-side down in a baking dish.
  3. In a bowl combine cheese, mustard, butter, tomato paste and chili powder. Coat the cauliflower with the mixture. Season with salt and pepper.
  4. Bake for about 45 minutes or until the cauliflower is tender using the tip of a knife. Cover with aluminum foil if needed to prevent burning.
