Roasted Squash Hummus

Drop the store-bought dip and make this easy, autumn-inspired hummus instead.

Ingredients

  • 2 cups butternut squash, peeled, seeded and cubed
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup
  • 1 roasted garlic clove
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cumin
  • 1 cup white beans
  • Salt and pepper
  • Pumpkin seeds
  • Toasted pita
  • Crackers or chips
  • Carrot sticks

Steps

  1. Preheat your oven to 400˚F. On a baking sheet covered with parchment place the chopped squash and garlic clove and drizzle with olive oil. Rub in with a little salt and pepper and bake for 30 minutes until tender.
  2. Combine all ingredients in a food processor until a paste is formed.
  3. Top with pumpkin seeds and serve with chips, chopped veggies or pita.
