Sakura Anpan (Adzuki Bean Paste Bread)

Take warm, flaky strawberry and matcha pastries to the next level with sweet bean paste.


  • Dough:
  • 160 grams flour
  • 1 teaspoon instant dry yeast
  • 1 1/2 tablespoon sugar
  • 1 tablespoon skim milk
  • 1/2 beaten egg
  • 80cc warm water
  • Strawberry:
  • 120 grams sweetened white bean paste
  • 1 tablespoon powdered strawberry
  • 1 tablespoon sugar
  • Matcha:
  • 120 grams sweetened white bean paste
  • 1 tablespoon matcha powder
  • 1 tablespoon sugar
  • Others:
  • Black sesame seeds
  • 1/2 beaten egg


  1. Combine all ingredients for the dough in a bowl and let it sit in a warm oven (40 degreess C) for 30 minutes.
  2. Combine white bean paste, powdered strawberry and sugar and mix well. Do the same for the matcha paste.
  3. Divide dough into four even portions.
  4. Place strawberry paste in the center of the dough and wrap to enclose.
  5. Flatten the dough with your hand. Make 10 cuts starting from the outside in, making sure to stop cutting before you get to the center.
  6. Slightly twist each cut of dough inwards to create flower petals.
  7. Brush with beaten egg and sprinkle sesame seeds onto the center.
  8. Bake for 15-20 minutes at 180 degrees C.
