Mango Star Roll Cake

This roll cake is hiding a sweet (mango) surprise!

Ingredients

Whipped Cream

  • 200cc heavy cream
  • 100g sugar

Bavarian Batter

  • 60g granulated sugar
  • 2 egg yolks
  • 120g Mango puree
  • 5g gelatin
  • 30ml hot water
  • 100g heavy cream

Meringue

  • 3 egg whites
  • 50g of granulated sugar

Roll Cake Dough

  • 50g of cake flour
  • 80ml of milk
  • 20g of vegetable oil

  • Bavarian Butter
  • Roll Cake Dough
  • Meringue

Steps

Whipped Cream

  1. Combine sugar and heavy cream to make whipped cream. Whip until stiff peaks form.

Bavarian Batter

  1. Combine egg yolks and granulated sugar in a bowl.
  2. Stir in mango puree and gelatin.
  3. Continue to stir the mixture until thickened over an ice bath.
  4. Stir in the whipped cream.
  5. Pour the mixture onto a tray and cool the mixture until hardened.
  6. Cut out the Bavarian batter using star cookie-cutters.
  7. Set the star-shaped Bavarian aside and let cool.

Roll Cake Dough

  1. Preheat the oven to 180 degrees.
  2. In a bowl, combine all the ingredients for Roll Cake Dough and Meringue.
  3. Mix well.
  4. Pour the dough onto a cake pan.
  5. Bake in the oven for 12 minutes at 180 degrees.

Mango Star Roll Cake

  1. Let the dough cool down. Once cooled, and spread over whipped cream.
  2. Place the star-shaped Bavarian cream on top of the whipped cream.
  3. Let the pastry chill in the refrigerator for 30 minutes. Decorate with whipped cream and silver dragées.
