Salmon Muffin

Savor this twist on a delightful muffin by smothering it with cream cheese.

Ingredients

  • 4 x eggs
  • 200 milliliters sunflower oil
  • 100 grams full cream yoghurt
  • Salt
  • 300 grams plain flour
  • 1/2 teaspoon dry yeast
  • 1/2 teaspoon bicarbonate
  • 200 grams smoked salmon
  • Dill
  • Philadelphia cream cheese

Steps

  1. Line a muffin tray with baking paper.
  2. Beat the eggs well and mix in the sunflower oil.
  3. Add yoghurt and salt and mix well.
  4. Then add flour, yeast and bicarbonate and mix again.
  5. Cut the smoked salmon into small pieces and add it to the mixture with some fresh dill (as much/little as you like)
  6. Mix well then scoop portions of the mixture into the individual muffin forms.
  7. Cook in the oven for 30-40 minutes at 180 degrees celsius.
  8. Serve with a dollop of Philadelphia cream cheese while they are still warm.
