Salmon Wellington

Spinach and salmon wrapped in a flaky pastry will change the way you eat fish.


  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 1 bunch fresh spinach leaves
  • Salt, to taste
  • Nutmeg, to taste
  • 1 package puff pastry dough
  • 10 1/2 ounces salmon fillet
  • White pepper
  • 1 egg yolk, for brushing


  1. Heat butter in a skillet, and sauté the onion, garlic and spinach. Season with salt and nutmeg. Set aside.
  2. Spread out the pastry dough in a baking pan, place the salmon on top, and season with salt and white pepper. Add the sautéed spinach mixture over the salmon.
  3. Wrap the puff pastry around the salmon, make cuts on top and brush with beaten egg yolk.
  4. Bake in preheated oven at 350°F for approximately 40 minutes.
