  • For the salted caramel:

  • 1 cup sugar

  • 1/4 cup cold water

  • 1/2 cup heavy cream

  • 2 tablespoons unsalted butter

  • 1 teaspoon salt

  • For the fritters:

  • 3 large Granny Smith apples, peeled, cored and sliced into 1/2-inch pieces

  • 2 tablespoons lemon juice

  • 1 teaspoon vanilla

  • 3 tablespoons sugar, divided

  • 1 1/2 teaspoons cinnamon, divided

  • 1 cup all-purpose flour

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 2 large eggs

  • 1/3 cup buttermilk

  • 1/2 cup cinnamon sugar

  • 4 cups canola oil

  1. For the salted caramel: In a medium saucepan, combine sugar and cold water. Cook on medium-high heat without stirring until the sugar has become golden, approximately 8 minutes. Remove from heat and carefully stir in heavy cream, being cautious of splattering sugar. Stir in butter and salt. Reserve two tablespoons for fritter dough, and set the rest aside.

  2. For the fritters: In a medium bowl, combine prepared apple pieces with lemon juice, vanilla, 1 tablespoon of sugar and 1/2 teaspoon cinnamon. Set aside.

  3. In a large bowl, combine flour, baking powder, baking soda, remaining cinnamon, salt and remaining sugar. Stir in eggs, buttermilk and two tablespoons of the salted caramel. The dough will look lumpy. Add apple mixture and stir to combine.

  4. In a medium pot, heat oil to 365 degrees. Drop 1/2 cup of fritter dough into the oil and fry until golden on all sides, approximately 3 minutes. Remove from the oil and place on a baking sheet covered with a cooling rack. Repeat this process to use all the dough. Sprinkle fritters with cinnamon sugar and let them cool slightly. Top with salted caramel. Serve immediately!
