Savory Cheesecake

Finally, a cheesecake that's meant to be eaten for dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 chopped onion
  • 1 chopped garlic clove
  • 1 can peeled tomatoes
  • 1 chopped chili pepper
  • 1/2 chopped fresh ginger
  • 2 tablespoons balsamic vinegar
  • 1/2 cup brown sugar
  • 150 grams crackers
  • 80 grams melted butter
  • 4 eggs
  • 450 grams cream cheese
  • 1 cup grated ricotta
  • 1 tablespoon chopped green onions
  • Salt
  • Black pepper

Steps

  1. In a pan, heat the oil, brown the onion and the garlic. Then, add the tomatoes, chili, ginger, vinegar and brown sugar. Cook in medium heat until thick. Reserve.
  2. Add the crackers and the butter to the processor and grind well until combined.
  3. Press the crumb into the bottom of a springform pan and refrigerate it.
  4. Mix the eggs, cream cheese, ricotta and the green onion. Season with salt and pepper.
  5. Pour the creamy mixture over the cracker crust and bake in a preheated 350°F (180°C) oven for 50 or until firm. Remove the cake from the oven and cover with tomato jam.
