Seared Tuna With Lemon Wasabi Sauce

When you're looking to impress some taste buds, try searing your tuna and adding a tangy wasabi sauce.


  • 1 fatty tuna fillet
  • 1/2 teaspoon salt
  • 1 bowl cooked Japanese rice
  • Baby greens
  • Thinly-sliced welsh onions
  • Lemon
  • Capers
  • Lemon wasabi sauce:
  • 1/2 lemon
  • 1/2 teaspoon wasabi
  • 20 grams capers
  • 1/2 teaspoon salt
  • White pepper
  • 40 grams ice
  • 2 grams powdered gelatin
  • 1/2 teaspoon honey
  • 30 milliliters boiling water


  1. Season tuna with salt and pepper on both sides.
  2. Lightly sear both sides with a torch and slice into thin slices.
  3. In a bowl, combine boiling water and gelatin and mix to dissolve. Then add in salt, white pepper, wasabi, capers, ice and lemon juice and mix well until ice has melted.
  4. Serve tuna over a bowl of cooked rice. Garnish with baby greens.
  5. Top with sauce and sliced welsh onions. You can also add some pink peppercorns and a slice of lemon for visual appeal. Serve immediately.
