Seared Wagyu Beef Sushi with Cotton Candy
A little salty, a little sweet.
Ingredients
- Sauce:
- 1 tbsp soy sauce
- 1 tbsp cooking sake
- 1 tsp mirin
- 1 tsp sugar
- 100g cooked rice
- 1 tsp balsamic vinegar
- 1 tsp rice vinegar
- 2 tsp sugar
- 1 tsp salt
- Wasabi, as needed
- 3 thinly sliced Wagyu beef
- Cotton candy, as needed
- 1 egg, beaten
Steps
- In a pot, combine the ingredients for the Sauce and boil it down until it begins to thicken.
- In a bowl, mix together the rice, balsamic vinegar, rice vinegar, sugar, and salt.
- Shape the rice from step 2 into bite-sized portions and place them on a plate. Put a little bit of wasabi on top.
- Line a tray with Wagyu beef strips and sear one side of the strips with a culinary torch.
- With the seared side facing up, place the Wagyu strips on top of the rice from step 3.
- With a pastry brush, glaze each Wagyu beef with the Sauce.
- Place the cotton candy on top and sear with the culinary torch.
- Dip the sushi in beaten egg, if you like. Enjoy!
