• Sauce:
  • 1 tbsp soy sauce
  • 1 tbsp cooking sake
  • 1 tsp mirin
  • 1 tsp sugar
  • 100g cooked rice
  • 1 tsp balsamic vinegar
  • 1 tsp rice vinegar
  • 2 tsp sugar
  • 1 tsp salt
  • Wasabi, as needed
  • 3 thinly sliced Wagyu beef
  • Cotton candy, as needed
  • 1 egg, beaten


  1. In a pot, combine the ingredients for the Sauce and boil it down until it begins to thicken.
  2. In a bowl, mix together the rice, balsamic vinegar, rice vinegar, sugar, and salt.
  3. Shape the rice from step 2 into bite-sized portions and place them on a plate. Put a little bit of wasabi on top.
  4. Line a tray with Wagyu beef strips and sear one side of the strips with a culinary torch.
  5. With the seared side facing up, place the Wagyu strips on top of the rice from step 3.
  6. With a pastry brush, glaze each Wagyu beef with the Sauce.
  7. Place the cotton candy on top and sear with the culinary torch.
  8. Dip the sushi in beaten egg, if you like. Enjoy!
