Sectioned Mirror Cake

  • 1 teaspoon powdered gelatin
  • 2 ounces nappage
  • 1 tablespoon water
  • White food coloring
  • 1 cup raspberry puree
  • 1/3 cup water
  • 1/2 cup granulated sugar
  • 5 ounces condensed milk
  • 5 ounces white chocolate melts
  • 3 teaspoons gelatin powder
  • Blue and red food coloring

Yogurt mousse

  • 10 1/2 ounces cream cheese
  • 1 1/4 cups heavy cream
  • 7 ounces plain yogurt
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 2 1/2 teaspoons gelatin powder


Sectioned Mirror Cake

  1. Add a small amount of water to the gelatin powder; heat and melt in the microwave.
  2. Put all the ingredients for the yogurt mousse in a bowl and mix together.
  3. Add water and white food coloring to the nappage and heat.
  4. Put gelatin in the raspberry puree and mix. Transfer to a silicone pan and freeze.
  5. Fill a round baking dish with half of the yogurt mousse. Place the frozen raspberry puree on top, then add the remaining yogurt mousse. Place in freezer.
  6. In a sauce pot, add water, granulated sugar and condensed milk and stir over medium heat.
  7. Place white chocolate melts in a mixing bowl and pour the condensed milk mixture over the top. Add gelatin powder, and then use an immersion blender to mix until smooth. Color with the red and blue food coloring.
  8. Pour mixture over the frozen mousse cake. Place nappage on a metal spatula, and then gently brush the surface. Once hardened, trim excess with a knife, then slice and serve.
