Skillet Meatloaf With Eggs and Feta

Baked with cheese, eggs and tomato sauce, this flavorful meatloaf is the ultimate morning dish.


  • 2 tablespoons butter
  • 1 yellow onion, minced fine
  • 1/2 cup red bell pepper, seeded and chopped fine
  • 3 garlic cloves, minced
  • 1/2 cup canned tomatoes, crushed
  • 2 pounds lean ground beef
  • 1/4 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 cup chopped cilantro
  • 9 eggs (3 for meatloaf mixture and 6 for the top)
  • 3/4 cup whole milk
  • 1/2 cup crumbled feta
  • Or the sauce
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar
  • 1/4 cup harissa
  • Steps


  1. Preheat oven to 350°F.
  2. Melt butter, and sauté onion, bell pepper and garlic until tender. Add chopped tomatoes and and cook until jam-like in consistency, about 10 minutes.
  3. Once veggies are cool, in a large bowl, mix together ground beef, breadcrumbs, salt, pepper, cayenne, cumin, paprika, cilantro, 3 eggs, milk and half the feta.
  4. Scoop mixture into a 9-inch cast-iron pan, press down into pan, creating little nooks for the eggs for later. Bake for 30 minutes, until temperature reads 160°F.
  5. Mix together sauce ingredients and slather over the top. Nestle remaining eggs and sprinkle with remaining feta. Bake for another 5-7 minutes until eggs are set.
  6. Let meatloaf cool slightly before slicing and removing from pan. Serve with extra harissa if desired.
