Banish boring weeknight meals with these 4 sheet-pan salmon dishes.

Ingredients

Zucchini Fries

  • 2 Large zucchini
  • 1 cup breadcrumbs (panko or Italian)
  • ¼ cup grated parmesan cheese (optional)
  • 2 eggs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt
  • Pepper

HERBED SALMON & ZUCCHINI FRIES

  • 2 (6 oz) skinless salmon fillet
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, as needed
  • 1 lemon, sliced
  • Fresh dill, to taste
  • Fresh parsley
  • 2 garlic cloves

Steps

Zucchini Fries

  1. Preheat the oven to 425˚F.
  2. Trim the ends and cut into ½ inch slices. Set aside.
  3. In a large bowl, combine bread crumbs, parmesan, garlic powder, Italian seasoning, salt, and pepper.
  4. Dip zucchini in eggs, then bread crumb mixture, then lay in a parchment lined sheet tray.
  5. Drizzle with olive oil, then bake for 15-20 minutes, flipping once in between.
  6. Reduce the heat to 400˚F (200˚C)

HERBED SALMON & ZUCCHINI FRIES

  1. Move the zucchini fries to the sides of the pan, to make space for the salmon. Place salmon in the middle of the pan.
  2. Drizzle olive oil on the salmon, then season with salt and pepper. Top with dill, parsley, garlic and lemon slices.
  3. Bake for 10-12 minutes.

  • 2 large russet potatoes, sliced into wedges
  • 3 tablespoons olive oil
  • ½ cup parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon pepper

BAKED FISH & CHIPS

  • 2 (6 oz) skinless salmon fillet
  • 1 egg
  • ¼ cup panko breadcrumbs
  • 1 large garlic clove, minced
  • 1 tablespoon fresh parsley, chopped
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, to taste

Steps

Baked Potato Wedges

  1. Preheat the oven to 400˚F (200˚C)
  2. Slice the potatoes into wedges or fries. Place the potatoes on a parchment lined baking sheet.
  3. Drizzle with olive oil, cheese, salt, Italian seasoning, garlic powder, paprika, and pepper. Toss to coat, then arrange the wedges skin side down.
  4. Bake for 30 minutes, flipping midway through.

BAKED FISH & CHIPS

  1. In a medium bowl, mix breadcrumbs, garlic and parsley.
  2. In a separate bowl, whisk egg. Dredge the salmon in the egg, then breadcrumb mixture.
  3. Move the potato wedges to the side, lay the salmon in the middle of the baking sheet. Sprinkle salmon with salt and pepper. Drizzle salmon with olive oil
  4. Bake for 10-12 minutes.

  • 1 pound broccoli
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • ½ teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • ¼ cup reduced sodium soy sauce
  • ¼ cup honey

Steps

  1. Place salmon in a sealable bag or medium bowl.
  2. In a small bowl or measuring cup, mix marinade ingredients.
  3. Pour the marinade on the salmon.
  4. Let the salmon marinate in the refrigerator for at least 30 minutes.
  5. Preheat oven to 400˚F.
  6. On a baking sheet, lay broccoli, then drizzle olive oil and sprinkle salt and pepper.
  7. Bake for 15 minutes.
  8. Take pan out and make space for the salmon in the center. Lay marinated salmon in the center of the pan.
  9. Bake for 10-12 minutes.

  • 2 cups fresh basil leaves, packed
  • 2 garlic cloves
  • ⅓ cup pine nuts or walnuts
  • ½ cup olive oil
  • ½ cup Parmesan Cheese
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon lemon juice

PESTO & TOMATO SALMON

  • 2 (6 oz) skinless salmon fillet
  • 10 cherry or grape tomatoes, halved
  • 3 tablespoons pesto
  • 2 tablespoon olive oil
  • 1 pound asparagus
  • Salt, to taste
  • Pepper, to taste
  • ½ cup parmesan, shredded.

  1. Combine all ingredients in food processor or blender.

PESTO & TOMATO SALMON

  1. Preheat oven to 400˚F (200˚C)
  2. Lay salmon down in the middle of a parchment lined baking sheet. Spread pesto on top of the salmon. Top with tomatoes.
  3. Lay asparagus on the sides of the pan. Drizzle olive oil, then sprinkle salt, pepper, and parmesan.
  4. Bake for 10-12 minutes.
