HONEY SOY SALMON

Ingredients

  • 2 (6 oz) skinless salmon fillet
  • 1 tablespoon olive oil
  • 1 pound broccoli
  • HONEY SOY MARINADE:
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • ½ teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • ¼ cup reduced sodium soy sauce
  • ¼ cup honey

Steps

  1. Place salmon in a sealable bag or medium bowl.
  2. In a small bowl or measuring cup, mix marinade ingredients.
  3. Pour the marinade on the salmon.
  4. Let the salmon marinate in the refrigerator for at least 30 minutes.
  5. Preheat oven to 400˚F.
  6. On a baking sheet, lay broccoli, then drizzle olive oil and sprinkle salt and pepper.
  7. Bake for 15 minutes.
  8. Take pan out and make space for the salmon in the center. Lay marinated salmon in the center of the pan.
  9. Bake for 10-12 minutes.
