PESTO & TOMATO SALMON

Ingredients

  • 2 (6 oz) skinless salmon fillet
  • 10 cherry or grape tomatoes, halved
  • 3 tablespoons pesto
  • 2 tablespoon olive oil
  • 1 pound asparagus
  • Salt, to taste
  • Pepper, to taste
  • ½ cup parmesan, shredded.
  • HOMEMADE PESTO:
  • 2 cups fresh basil leaves, packed
  • 2 garlic cloves
  • ⅓ cup pine nuts or walnuts
  • ½ cup olive oil
  • ½ cup Parmesan Cheese
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon lemon juice

Steps

  1. Preheat oven to 400˚F (200˚C)
  2. Lay salmon down in the middle of a parchment lined baking sheet. Spread pesto on top of the salmon. Top with tomatoes.
  3. Lay asparagus on the sides of the pan. Drizzle olive oil, then sprinkle salt, pepper, and parmesan.
  4. Bake for 10-12 minutes.
