Shredded Steak with Vegetables

Change up your average steak dinner with this meal of tender, marinated steak roasted with potatoes, onions and more.


  • Marinade:
  • 1 handful chopped parsley
  • 1 tablespoon cayenne pepper
  • 1 tablespoon oregano
  • 3 garlic cloves, minced
  • 1 tablespoon chili powder
  • 1/2 cup cooking oil
  • 1/4 cup wine vinegar
  • 1 pound top round steak
  • For the vegetables:
  • 3 potatoes, cut into chunks
  • 1 onion, sliced
  • To serve:
  • 1 tomato, cut into chunks
  • 1 onion, sliced
  • Chopped parsley
  • Aioli


  1. Mix all ingredients for marinade and place them in a bag. Add meat and massage bag to ensure meat is covered. Allow to marinate overnight.
  2. Preheat oven to 300 degrees.
  3. In a grill pan over medium heat, add some olive oil. Add the meat and cook on both sides to brown.
  4. In a baking dish, add the potatoes and onions. Place meat on top and drizzle with remaining marinade. Cover the dish with foil and bake for 3 hours. Turn off the oven and let sit for 15 minutes.
  5. On a serving plate, add a mound of cooked potatoes and onions, followed by pieces of the meat. Top with sliced onions, tomato wedges, parsley and aioli.
